Home made Pitas

2 1/2 cups wheat flour plus a little more for rolling out dough
1Tablespoon heaping Gluten
2 teaspoons salt
1 Tablespoon sugar
2 teaspoons active dry yeast
2 Tablespoons olive oil
1 cup warm water (105-110 degrees) the water temp. is important
Preheat oven to 500° the oven temperature is very important.

Mix 1 cups Flour, Gluten , Salt.Sugar and yeast.in a mixing bowl, then add the oil and water and mix dough 2 to 3 minutes. add the rest of flour 1/2 cup at a time. If the Dough is too moist you can add more flour. Knead dough for 3 minutes in mixer.
Place dough on a floured surface, then shape ino a circle and cut into 8 even pieces.
Shape dough pieces into balls(you can let the dough balls rest for about 15 minutes ) roll out the dough about 6 inches around and 1/2 inches is thick. The round is not as much important as the thickness.
If the dough is to thin it will not a puff. Don't worry if it does not puff you can use them for pizza or cut and make into pita chips.
Place the rolled out dough on a piece of tin foil and place the foil straight on the rack in the oven. There is no need to use a cookie sheet the dough will not puff as well on a cookie sheet.
Cook dough and 500° 5 to 8 minutes, cook 2 at 3 pitas at a time. Is important to make sure your oven temperature stays at 500°.
