Bread

Schlotsky’s Bread
This is more like pancake batter… but it will make a great bread
INGREDIENTS
1/2 cup warm water
2 tablespoon white sugar
2 1/4 teaspoons active dry yeast
1/4 teaspoon baking soda
1 1/4 cup warm water
½ to ¾ cups powdered milk
1/2 teaspoon salt
1 1/2 cups flour
1 cup whole wheat flour
2 tablespoons white cornmeal (yellow will work but I like the white)

DIRECTIONS
In a small bowl stir together the ½ cup warm water, sugar, and yeast. Stir to dissolve and set aside.
In a large bowl dissolve baking soda with the 1 1/4 cup warm water. Add the powdered milk ,salt and one cup of the whole flour. Beat with a wire whisk until smooth. Beat in yeast mixture and remaining flour.
Batter should be thick, sticky, and smooth.
Prepare 2 10 inch cast iron pans with non-stick spray. Dust pans with cornmeal. Place 1/2 batter in each pan. Batter will spread during rising time. Spray top of batter with non-stick cooking spray. Cover and let rise for one hour.
Spray top of bread with non-stick cooking spray a 2nd time just before baking .
Bake in a preheated 375 degree for 20 minutes.
Allow to cool for an hour before slicing.

Note Schlotsky’s toasts the bread and cheese them make the sandwich.

A New Bosch and Tons of wonderful bread!

We make all of our own bread (no store bread at all)... I usually make it once a week or so and freeze some for "later"...
It really isn't a hard task, but it does take some time. I usually use my kitchen aid mixer and mix up a loaf at a time (i have the smallest kitchen aid out there, which I dearly love, but it will only mix 1 loaf at a time). As of late, I have started to use my "old" bread machine to mix a loaf of dough cause my kitchen aid seems to be somewhat "taxed" with the amount of bread dough I mix. The bread machine was pretty much the same, it only mixed on loaf at a time, I would take it out of the machine form it in a regular bread pan, let it rise, and then back it...and that has worked, but now the good ol' bread machine is not wanting to "keep up" with the load either... and so "MY HUSBAND BOUGHT ME A BOSCH COMPACT MIXER" I just cant believe it, it is so wonderful!!!!!!!!!!!!!!!!!!!!!!!!! Look at all my wonderful bread...and I did it in only a couple hours.
After I bake all my bread, I like to cut it all up so that we can use it when needed, insted of cutting it as we use it. (the kids hate cutting it and seem to always hack it up and have huge chunks and complain if I don't have it pre-cut) . Most people ask me how I cut my bread up so nicely and evenly and well, I am gonna tell you.... I do it with an electric knife. Most electric knives come with 2 sets of blades...one for meat and one for bread. Most people never use the bread blades, but I do... they work perfectly and make the job a snap. Make sure you have the bread blades, it makes the job much easier and your bread will not get smooshed either. Just cut the bread slowly working from one end to the other. I live to do it when the bread is still very warm. Most people say to wait till it is cool, but I disagree, cause when it is still very warm, it is all steamy and very moist, as you cut it, there are vertually no crumbs and mess, but if you wait till it is cool, it will crumb much more. Give it a try, it works great.
Here is a bit of a "different loaf"... It is fun, cause it just "tears" apart in the little sections, but looks pretty if you are having company or want to take it as a hostess gift. I do this my simply twising 2 or 3 long snake like pieces of dough together and placing it in a short pan so that it will expand width wise. It comes out perfect everytime.
This is one of my daughters favorites...just good ol' french bread that she can make garlic bread out of. I thing the girl could live off of garlic bread, lol.

Just another bread day

I made bread today. I made 5 loaves and tought a friend how to do it all at the same time! We made 1 cinnamon swirl whole wheat, 1 onion whole wheat loaf, and 3 Honey whole wheat loaves.
There just isn't much better than some fresh, warm, just baked bread for lunch. Husband and dd had ham and the ds and I had peanut butter.

Outdoor Cooking!

This is my husbands version of making flat bread. He has them on the gas grill, on a pizza stone, cooking up outside. They were delicious. We also cooked some chicken, porksteaks and some port tenderloin on a wood fire in the fire pit. Cooking outside in such wonderful weather is awesome and keeps the house cool too. Tasty Dinner

Check it out, we had a wonderful and delicious dinner the other night and I though I would share it with everyone.
Cullen made some oversize flour tortillas and on them we spread some mashed avacado (that I added a bit of lemon juice to) onto them. We took some lettus (from the garden) and some cherry tomatoes and added some vinegrette dressing and tossed, added it to the tortilla then added some chopped grilled chicken breast... YUM!!! The kids do not like avocados so simone used salsa on hers insted and kenny used sour cream...but they all turned out great!!!

Making Bread


There is absolutely nothing better than fresh baked, warm and fluffy whole wheat bread. My family loves it and we make it alot. A lot of people are all low carb and all, but not us, not when it comes to this wonderful delicious bread.
My recipe is :
Whole wheat bread
1 cup hot water
1 Tablespoon rapid yeast
place this in a mixing bowl or in your bread maker and stir it and leave it alone for 5 minutes.
After the 5 minutes, add
3 cups fresh ground whole wheat (you can use any sort you like, this batch was make with all hard red wheat, but hard white is good or any combo of both is ok too) 3 tablespoons of gluten, 1 teaspoon salt (you can use ordinary table salt or sea salt or kosher, just whatever you prefer), 4 Tablespoons of canola oil (i have also used olive oil and that worked great too, or any veggie oil would do), and 4 Tablespoons of honey.
Just add it all in and then start mixing...knead it for at least 5 minutes or so till it is smooth and elastic (you can do this in your bread maker too and it works just as well or you can do it with you kitchen aid mixer for a few minutes, it doesn't take as long in the mixer)
Then turn it out and shape it and place it into a greased bread pan (I personally like to use glass pyrex bread pans but any would do). Try to use no extra flour for this and just shape it quickly and place it in the pan. Put it in a warm place and allow it to rise (i like to use my dehydrator or my convection oven that has a warm setting but you can also use a gas stove with the pilot light on or just any warm location)...let it rise about 25-35 minutes till it rises to the height you like. I usually let it rise till about 1 to 1 1/2 inches over the rim of the pan. When it is the right height, then slowly and easily move it to a hot ready to go 350 degree oven. Allow to cook for 45-55 minutes till it is nice and brown...it should be firm to the touch and when yo thump on it, it should sound hollow. take it out of the oven and let it sit for 5 minutes, then butter the top of the loaf and move out onto a cooling rack...then enjoy.
We love this recipe and It has taken me years to get this to a nice wonderful fluffy loaf using all whole wheat, so I hope you like it to...LMK, thanks.
