Schlotsky’s Bread
This is more like pancake batter… but it will make a great bread
INGREDIENTS
1/2 cup warm water
2 tablespoon white sugar
2 1/4 teaspoons active dry yeast
1/4 teaspoon baking soda
1 1/4 cup warm water
½ to ¾ cups powdered milk
1/2 teaspoon salt
1 1/2 cups flour
1 cup whole wheat flour
2 tablespoons white cornmeal (yellow will work but I like the white)
DIRECTIONS
In a small bowl stir together the ½ cup warm water, sugar, and yeast. Stir to dissolve and set aside.
In a large bowl dissolve baking soda with the 1 1/4 cup warm water. Add the powdered milk ,salt and one cup of the whole flour. Beat with a wire whisk until smooth. Beat in yeast mixture and remaining flour.
Batter should be thick, sticky, and smooth.
Prepare 2 10 inch cast iron pans with non-stick spray. Dust pans with cornmeal. Place 1/2 batter in each pan. Batter will spread during rising time. Spray top of batter with non-stick cooking spray. Cover and let rise for one hour.
Spray top of bread with non-stick cooking spray a 2nd time just before baking .
Bake in a preheated 375 degree for 20 minutes.
Allow to cool for an hour before slicing.
Note Schlotsky’s toasts the bread and cheese them make the sandwich.
